Instructions:
- Prepare the Mixture:
- In a large mixing bowl, combine the thawed Cool Whip, powdered sugar, peanut butter, crushed graham crackers, and vanilla extract.
- Mix well until all ingredients are fully combined and the mixture is smooth. You can use a spatula or an electric mixer on low speed for better incorporation.
- Form the Candy:
- Line a baking sheet with parchment paper.
- Scoop out a tablespoon of the mixture and roll it into a ball. Place the balls on the prepared baking sheet. Repeat until all the mixture is used.
- You should end up with about 20-24 candy balls.
- Chill:
- Place the baking sheet in the freezer for about 30 minutes, or until the candy balls are firm.
- Melt the Chocolate:
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable oil (if using).
- Heat in the microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
- Dip the Candy:
- Remove the candy balls from the freezer. Using a fork or toothpick, dip each ball into the melted chocolate, ensuring it’s fully coated.
- Allow any excess chocolate to drip off and place the dipped candies back onto the parchment-lined baking sheet.
- Set the Chocolate:
- Once all the candies are dipped, return them to the freezer for another 15-20 minutes, or until the chocolate is completely set.
- Serve and Enjoy:
- After the chocolate has hardened, your Easy Cool Whip Candy is ready to serve! Store any leftovers in an airtight container in the refrigerator.
