Shrimp Scampi with Roasted Veggies

For the Roasted Vegetables:

  • 2 cups cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • Salt and black pepper to taste

For Serving:

  • 8 ounces linguine or your favorite pasta, cooked according to package instructions
  • Grated Parmesan cheese (optional)
  • Lemon wedges
